Macro Shots on Cake Decor (Part 2)



These are the various shots doing the "stringwork"... Royal Icing & a tight round nozzle were used to pipe this kind of work. The goal is to pipe in a straight, thin & consistent manner.

Royal Icing dries fast, and breaks easily.



This entire process not only tests one's patience, but also your eye sight. If any lines were broken, you have to start all over and pipe again.
In other parts of the world (western), cake decorators charge them by inch.
So if the cake its done beautifully, it can turn out quite exquisite.

Macro Shots on Cake Decor (Part 1)

I love taking macro shots, and looking at it, on food especially. Mastering the art of photography is an entire world by itself.

However, i am not discouraged by the whole "mambo-jumbo" of handling the camera.

3 Tier Wedding Cake


A very elongated 3 tier cake, with pink, white and soft green color selection.

Hand made the sugar roses. I love the cornelli lace, its on the second tier, where you see
free-hand moving piping; looked elegant from far. Its the untidiness that makes the whole cake presentation appealing.

World Diabetes Day!

Hi all,

Its been long time no posting, have been busy with orders, duties, intensive cake decorating workshops & classes.

I thank God for what He provided, for being able, for good health, for supportive family & friends, for innner strength, for patience, for the guts to take this order.



I still find it impossible to believe that my family & I, finally fulfilled thousand over cookies.
THOUSAND over...!

I must thank God, God is great, for He has always been there for me & my family.



The time spent sourcing for supplies,
the rejections,
the sensations of last minute changes,
the jam on the road that we have to endure,
the painstaking process for rolling the dough, repetitively for more than thousand over times, the numbness on the heel,
the soreness of my palms

its incredible, i can't believe its finally over ...




But i believe that there will be more to come...

Simple Low Fat Yoghurt Trifle with Peach Slices

ANYONE CAN DO THIS ...

This recipe is so flexible, you need not need to worry about the measurement, just indulge and serve as you like.

The idea is the layering process of the whole presentation.

The original recipe for Trifle are rich and hearty.

My version are light, refreshing & fuss free, perfect for warm lazy Sundays.

Recipe:

1. Low fat plain yoghurt
2. Chiffon cake (cubed)
3. Peach slices (or any fruits you like)
4. Granola (you may substitute with chopped roasted nuts for extra crunch)

Tools:

1. clear bowl or Martini glass
2. spoon

Method:

1. For simple plating, place fruit slices at the bottom of the bowl till all gaps are covered.
2. Pour in low fat yoghurt until all fruits covered. Use spoon to even the yoghurt layer.
3. Layer the cake cubes.
4. Add in granola , spread evenly.
5. Repeat Step 1 - 4 until bowl are full.
6. You may decorate top layer with fruit slices for nice presentation.

For a sexier presentation, replace bowl with Martini glass, only this time smaller quantity.

Served chilled. Enjoy

Kiwi Cake


Looking at the batter texture, i really wanna swim in it, and get slimey-ed (if there is such a word).


I wanna marinate so long till my whole body smell like it.


Fetish i guess.


Lemon & Pepper Chocolate


I tried this chocolate, absolutely headache-y.


Packaging was nice, recyclable material with pastel lime green & black color.


Smell like maturing cheese, i accept it with an open heart. I kept on reminding myself its chocolate, and not cheese.


Tasted smooth, and cheesy (its chocolate hello), must be the white choc & lemon combo, with hint of peppery shot to the tastebuds.


I miss those spicy chilly-choc sensation.

Mariah Carey...

I absolutely adore her, since the beginning of her career.

Despite the her current fashion sense, she gives me inspiration, BIG TIME...till now.

My favourites include Vision of Love, Love Takes Time, Fly Like a Bird...and now today, i wanna add this new song to the list I Want to Know What Love Is.

The beginning part of the song sounded very worship-y, like how i used to practise in a worship session, melodic piano opening.

With wide vocal range of hers and imaginative interpretation of the song, this beautiful song just brings back memories.

From Foreigner to Tina Arena, Flash Dance era, me waiting for my dad to pick me up from baby sitter...

Orange & Violet-themed Cupcakes

This order was made based on the color theme, with hand-made sugar roses at the bottom of the cupcakes layout.

These were then delivered all the way to Penang.

Hope the recepient impressed with the gift...(and love).

Cupcakes were chocolate, with dark chocolate buttercream.




Basketweave Cake with Royal Icing Flowers


Another work i have done recently.


Royal icing are basically made of egg whites, icing sugar & water to adjust the consistency.


A variety of colors can be added in to pipe out all sorts of interesting flowers & figure designs.


In this post, i have piped out quite a number of flowers (violet, violet leaves, apple blossom, primrose, pansy, just to name a few...)

The basketweave effect u saw are painstakingly piped out (single lines by single lines, vertically & horizontally) using buttercream icing.

Instead of just slather with buttercream, cake design can be wonderfully enhanced by using this technique, thus create a pleasing effect.

Durians.....

my mind kept on thinking about durians...

NO I AM NOT A BIG FAN OF DURIANs! it's sharp! and not forgetting the smell, it can kill!

no way...

(but my heart kept on wanting my hands to make Durian Butter Cake...)

(my nostrils gonna have a tough time...)

nose :" My Queen, please don't do this to me...please...:( "

heart :" my Queen, so many your heart want to try, you see, got Durian Puff, Durian Cheese Cake, Durian Ice Cream, Durian Chips, Durian Crepe, Durian Swiss Roll, Durian Egg Tart, and they even have Durian Jello (!)"

pause and awkward silence...

heart :" and...and... Roti Canai with Durian!!!"

Queen think :" Wahlao eh..!"

eyes :" look...look... Durian Oreo Cake also got...!"

Queen analyzing & imagining whether profile of these two ingredients matches...

Tattoo and cupcakes


This is "Pull Apart Chocolate Cuppies with Fresh Lemon Buttercream" did for a brother for his company product launch.

So exactly what's this got to do with the word "tattoo" you ask?

One technique in common between these cake decor and tattoo-ing is that these two different world, uses "Pattern Transfer", which is a very common technique, and is widely used by the tattoo artists.

Its usage is simple and straight forward. Basically you traced a pattern or a piece of art onto the tracing paper, then the traced art work will then transfered onto the desired canvas (skin or cake for that matter).

So, if you looked closely at the photo cupcakes i have captured above, this is the first time i am applying this technique onto cake decoration, and am quite happy with the end results.

I am beginning to itch, to try my hands on doing a Japanese floral art work, calligraphic type.

Steamed Choco Cuppies with logo picks


One final post for May 2009. I have got a surprise cuppies order. Steamed Choco Cuppies, which supposedly and initially was just an experiment to test out the silicone ware. I ended up saying YES,accepted the order, and bought 2 sets of silicone ware, in cuppies shape. I am loving this product...

As i slowly progress and brave myself to accept more big orders, i thank God for His blessings. How He especially blesses me with the strength, patience, talent, and joy while doing all sorts of preparation to get the orders fulfilled.

My mind kept on feeding me with all sorts of obstacle ideas, while my heart kept on telling me to do otherwise...

Accepting orders is not as easy as it seems, as alot of aspect needs to be taken care of, so that the end product satisfy both the customer and the critic in me. Sketches of cake designs, sourcing for ingredients, budgeting, marketing, and the "CLOSE-the-SALE-IN-CONFIDENCE" has lead me to open up my eyes to possibilities, where i never laid my eyes on before.

Having to juggle my current serious day job with my nightly effervescent "cakey" persona, the word "time management" has really brought a whole new meaning to my life, now...

Gerbera Daisy


This project i have incorporated flower arrangement to act as a topper for the cake. I loved the vibrant color with its contrasting effect and texture to compose the entire cake. Though i would pretty much prefer the leaves at the backgroud to be brighter green.

BLACK RIBBON w/h SILVER LINING on WHITE CAKE

I challeged myself to cover the cake. Was really excited about it. I expected it to be of smooth finishing with no breakage.

It turned out well, without breakage at all four corners, and ended up with some 'orange skin" effect.

"Orange skin" effect were much more pronounced especially today, as i think the weather might have contributed to it.

Tied the cake with a beautiful satin black ribbon with silver lining.




I liked it because of its color combination and different texture. Its sort of like simplicity and elegance all roll into one piece of art.

As i was making this, the word "fashion" comes to mind. Chanel especially.

If i ever show this piece to my friends, and ask for comments, they probably roll their eyes, and like "what"? Might be way-too-simple to them.

"Why want to complicate things?"

Cupcake with Fondant Ribbon


Made this as well. I can imagine how cute it is if these are in hundreds or thousands. The kids and children-at-heart will all drool over them, with lots of photo snapping, with the ooohhhhsss and aaaahhhhhsssss...

Textured Rolled Fondant, with Dragees


Made few designs using textured rolling pin. The last time i went to Singapore for a convention, i got to know that a particular brand uses bullet-proof material, to produce the pins, as this material is less susceptible to breakage.

Requires early preparation to allow petals to dry.







Once these are dried, calyx (or rather, sugar calyx) were incorporated to complete the look.

Later, it will be positioned on fondant covered cake.
